Cooking with olive oil is like cooking with wine.
Think about olive oil as you would of wine. Use different olive oils for different purposes. Strong and robust extra virgin olive oils can be used for cooking fish, meat, to make marinades, or to drizzle on strongly flavored ingredients like peppers or garlic. A medium intensity, well-rounded extra virgin olive oil is great on mozzarella or for bread dipping. We love it in vinaigrette or sprinkled on various steamed vegetables and on baked potatoes. A mellow late harvest oil could be used in baking a cake or to make mayonnaise. Olive oil or virgin olive oil are good for frying and sautéing.
Never use a wine or olive oil that does not taste good to you. An inferior one will leave an aftertaste. If you do the taste test and compare the "pure" to the "extra-virgin" and the you'll understand the difference.
Cooking with Olive Oil
Olive oil has been used for thousands of years in cooking and is one of the cornerstones of the healthy Mediterranean diet. It is very versatile and, with its unique flavor and aroma, has become a must-have in any kitchen in the world. Different olive oils complement different foods and uses. Olive oil can be used for sautéing, browning, stir-frying, deep frying, as an ingredient in marinades and sauces such as mayonnaise, pesto, or romesco, and as a condiment, drizzled over various dishes.
However when cooking with olive oil, save your extra-virgin expensive oils for salads, dressings, and vinaigrettes. Use it on a baked potato or add it to mashed potatoes instead of butter. Extra virgin olive oil tastes great on cooked vegetables or brushed onto fish or meat before serving.
It is of course always appreciated as a bread dipper or simply dabbed on a toasted piece of country bread that has been scratched with a clove of garlic.

THE SEVEN SPECIESLIVING WITH HISTORY
The Bible, nature, and beauty are the inspiration for products carrying The 7 Species label. They bring a wonderful world of flavors, images and wisdom, enriched by 5,000 years of history.
In biblical times, the Seven Species were not only the staple food of the ancient Jewish people, but were also used in spiritual rituals and as symbols of the soil's rich fertility.
These fruits and grains gained such importance that throughout the earth every great civilization gave their own meanings to each of the seven species. For the Jews, wheat signified prosperity and the earth's fullness; grapes meant happiness for the Greeks; In Hinduism, figs stood for beauty and eternal life. For the Chinese, pomegranates symbolized fertility. For Christians, barley stood for spiritual qualities, and in ancient Egypt, dates were the symbol of wisdom.
Finally, the olive, almost universally stood for peace and longevity. In biblical Israel, only the purest and most valued olive oil was used in the Holy Temple and for anointing the kings of Israel.
